Delicious Cheese Toppings: Medium to hard cheeses work best for salads. Goat and sheep mix cheeses have long been favourites like Blue Cheese, Cheddar, Mozzarella, Feta, Parmigiano, Roquefort, Gouda.

In addition to protein, it is helpful to add some nuts, or seeds. These also provide beneficial vitamins and nutrients to the salad. Extremely healthy an almost endless selection; from crunchy walnuts and the sweet raisin to pistachios, pumpkin seeds, almonds, peanuts, chia and poppy seeds, among others.

Some of My Basic Salads

Fruit salad - Fruit in full color, peeled and chopped, impossible to reject! Pack of vitamins, minerals, and fibre served in their own juices.
Beetroot Salad - Beetroot and Vegetable Salad served with a simple Vinaigrette dressing.


Beetroot and Avocado Salad, Mix Herbs served with Olive Oil and Lemon dressing.


This is a chopped salad for multiple variations in Spain, in some areas is mashed becoming almost a soup (Gazpacho), in others they may add other ingredients such as olives, garlic, celery, cucumber or lettuce. Used too for The Vinaigrette it is based on 3 ingredients: tomatoes, peppers, and onions. Can be add as a base in seafood such as octopus, mussels in cold plates. 


Mussel Salad - Red and green peppers onions and tomatoes with mussels. Salad dressed with oil and vinegar.

Caprese Salad - Mozzarella, Tomato and Basil Salad dressed with Extra Virgin Olive Oil.


Salad Dressing

Homemade tastes better, healthier and tasty!
Making the dressing is a matter of combining the Olive Oil and vinegar, along with the seasonings and flavourings. 
Feel free to be creative; add a few clove of crushed garlic or some chopped fresh basil, oregano or other delicious green herbs making the perfect addition to any Garden Salad! A teaspoon of honey or mustard will not only add flavour, it will also help stabilize the emulsion, so the dressing won't separate as quickly. Some seeds or nuts adding the iron and a squeeze of citrus, like lemon, lime or orange could be a nice addition.
